The first stages of making doenjang involve making what is called meju. Meju is made from soybeans, crushed, formed into blocks and inoculated with a mixture of mold which are abundant on straw. Now that my Meju is very well innoculated, I can hang the meju, which will also give the mold time to get to work inside the meju. We’re still a while away from a final doenjang, which could be up to a year away from now… but anyway follow to keep up 🤭
